This recipe came from a challenge.
Most vegan brownies rely on lots of sugar to create their texture. Take the sugar away and you're often left with something dry, crumbly or disappointing.
I wanted to create a brownie that was rich, gooey and deeply chocolatey without relying on sugar, eggs or dairy.
After plenty of experimenting, I discovered that silken tofu creates an incredible texture. Combined with dark chocolate, coconut oil and almond flour, it produces a brownie that is fudgy in the middle, rich in flavour and hard to believe is completely vegan.
Whether you're vegan, cutting back on sugar or simply love a good brownie, this recipe proves you don't have to compromise.
